Chicken Soup with Rice

Stiggy loves Maurice Sendak’s stories, especially Chicken Soup with Rice. And one day he asked me to make chicken soup with rice. I had a look online and there were quite a few recipes. I chose a simple one, and I worried it would be bland and unsatisfying, but it was deeeeelicious and very filling! Here’s the recipe, with a few changes I made:

1000 mls chicken stock
1 boneless, skinless chicken breast, cubed
1/2 cup uncooked rice
1 medium onion, chopped
2 fat garlic cloves, minced
2 medium carrots, sliced or diced
1 or 2 celery stalks, however you like
1/2 teaspoon thyme
pepper to taste
sprig of oregano (optional)

Fry onion, garlic, and chicken until done. In a pot bring stock to a boil. Bung everything into the pot and simmer, uncovered, until rice is done, stirring occasionally.

This is such a simple recipe, but really nice.

‘Mix it once! Mix it twice! Mix that chicken soup with rice!’
